Since commercial Pseudomonas fluorescens enzymes are not available, live Pseudomonas fluorescens microorganisms were inoculated into milk followed by extraction and purification by dialysis. Bacterial enzymes obtained were then inoculated into UHT skim milk. Non-inoculated milk was used as a control. Results obtained showed that Pseudomonas fluorescens NCIMB 702085 was more proteolytic than Pseudomonas fluorescens NCIMB 701274.
